These Strawberry Yogurt Parfait Cups are a quick and elegant treat. Layers of sweet macerated strawberries, creamy vanilla yogurt, and crunchy granola create a perfect textural symphony. They are simple to assemble and feel special without being complicated.

Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 2 tablespoons granulated sugar
  • 1 teaspoon fresh lemon juice
  • 2 cups plain Greek yogurt
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups crunchy granola
  • Fresh mint leaves for garnish (optional)

Instructions

  1. In a medium bowl, combine sliced strawberries, sugar, and lemon juice. Toss gently and let sit for 10-30 minutes to macerate and create a syrup.
  2. In a separate bowl, whisk together Greek yogurt, honey, and vanilla extract until smooth and creamy.
  3. To assemble, place a layer of macerated strawberries and juice into the bottom of four serving glasses.
  4. Add a layer of the sweetened yogurt over the strawberries.
  5. Sprinkle a layer of granola over the yogurt.
  6. Repeat the layers one more time, finishing with a final sprinkle of granola and a few reserved strawberry slices on top.
  7. Garnish with fresh mint leaves if desired and serve immediately.

Notes

For best texture, assemble just before serving to keep the granola crunchy. Components can be prepared 2-3 days ahead and stored separately. Use thick Greek yogurt for distinct layers. For a dairy-free version, use plant-based yogurt.
