  • 1 baguette, sliced into 1/2-inch thick pieces
  • 8 ounces brie cheese, rind removed and sliced
  • 1 pint fresh strawberries, hulled and diced
  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic, peeled
  • 2 tablespoons fresh basil, thinly sliced
  • 1 tablespoon balsamic glaze
  • Salt and freshly cracked black pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet. Brush one side of each slice lightly with olive oil. Bake for 5-7 minutes until edges are golden and crisp.
  2. Remove tray from oven. While bread is still warm, gently rub the cut side of the garlic clove over the top of each toast.
  3. Top each garlic-rubbed toast with a slice of brie. Return baking sheet to oven for 3-4 minutes, just until brie is soft and beginning to melt.
  4. While toasts are warm, spoon diced strawberries generously over the melted brie. Immediately sprinkle with fresh basil, a tiny pinch of salt, and a crack of black pepper.
  5. Just before serving, drizzle the entire platter with balsamic glaze.

Notes

For best results, assemble just before serving to prevent soggy bread. You can prep all components (toast bread, dice strawberries, slice basil) ahead of time and assemble at the last minute. A pinch of salt on the finished bruschetta is crucial for balancing flavors.
