Baileys Chocolate Mousse

A luxurious, cloud-like dessert featuring dark chocolate and Baileys Irish Cream. This mousse is rich yet light, sophisticated yet simple to make at home. Perfect for a special occasion or a comforting treat.

Ingredients

  • 6 ounces semi-sweet or bittersweet chocolate, finely chopped
  • 2 tablespoons unsalted butter
  • 1/3 cup Baileys Original Irish Cream
  • 1 cup heavy whipping cream, divided
  • 2 tablespoons granulated sugar
  • 1 pinch salt

Instructions

  1. Melt the chocolate, butter, and 2 tablespoons of heavy cream in a heatproof bowl set over a saucepan of gently simmering water. Stir until smooth and glossy. Remove from heat and let cool for 5 minutes.
  2. Stir the Baileys Irish Cream into the slightly cooled chocolate mixture until fully combined.
  3. In a separate bowl, using a hand mixer or stand mixer, whip the remaining heavy cream, sugar, and salt until soft peaks form.
  4. Vigorously fold about one-third of the whipped cream into the chocolate mixture to lighten it.
  5. Gently fold in the remaining whipped cream in two additions until no white streaks remain.
  6. Divide the mousse between 4-6 serving glasses or ramekins. Smooth the tops.
  7. Cover lightly with plastic wrap and refrigerate for at least 4 hours, or overnight, until set.

Notes

Ensure the chocolate mixture is slightly cooled before folding in the whipped cream to prevent deflating the mousse. For a non-alcoholic version, substitute Baileys with strong cold brew coffee. Do not skip the chilling time.
