This Watermelon Mint Refresher Smoothie uses frozen watermelon for a creamy, sorbet-like texture without added ice or dairy. Fresh mint and lime juice create a cooling, spa-like drink that is naturally vegan and gluten free. It is the perfect summer refreshment for hot days.

Ingredients

  • 4 cups seedless watermelon, cut into 1 inch cubes and frozen overnight
  • 1/4 cup fresh mint leaves, tightly packed
  • Juice of 1 fresh lime, about 2 tablespoons
  • 1/2 cup cold water or coconut water
  • Optional: 1 tablespoon honey or agave if you prefer a sweeter smoothie

Instructions

  1. Cut seedless watermelon into 1 inch cubes and spread in a single layer on a parchment lined baking sheet. Freeze for at least 6 hours or overnight.
  2. Wash and pat dry fresh mint leaves. Squeeze fresh lime juice.
  3. Add frozen watermelon cubes, mint leaves, lime juice, and cold water to a high speed blender. Start on low and gradually increase to high. Blend for 45 to 60 seconds until smooth and creamy. If the blender struggles, add a tablespoon more water at a time.
  4. Taste the smoothie and adjust sweetness if desired. Add honey or agave if needed and blend again.
  5. Pour into chilled glasses and garnish with a mint sprig and lime wheel. Serve immediately.

Notes

For a creamier texture, add half a frozen banana or 1/4 cup plain Greek yogurt (or coconut yogurt for dairy free). Mint can be swapped with fresh basil. For extra nutrients, add a handful of spinach. Store leftovers in an airtight container in the fridge for up to 24 hours (texture will thin).
