This vibrant salad is the ultimate summer refreshment. Sweet watermelon and crisp cucumber are paired with creamy feta and fresh mint, all brought together with a tangy lime dressing. The key is salting the watermelon first to prevent a soggy salad and intensify the flavors.

  • 1 small seedless watermelon, cubed (about 6-7 cups)
  • 8 ounces block feta cheese, crumbled
  • 1 large English cucumber, diced
  • 1/2 small red onion, thinly sliced
  • 1 cup fresh mint leaves, loosely packed
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons fresh lime juice (about 1-2 limes)
  • 1 tablespoon honey or maple syrup
  • Salt and freshly cracked black pepper

Instructions

  1. Place the cubed watermelon in a colander set over a bowl or sink. Sprinkle lightly with about 1/2 teaspoon of salt, toss gently, and let sit for 10 minutes.
  2. While the watermelon rests, make the dressing. In a small bowl or jar, whisk together the olive oil, fresh lime juice, and honey. Season with a pinch of salt and a few grinds of black pepper.
  3. In a large serving bowl, combine the diced cucumber and thinly sliced red onion.
  4. Add the salted watermelon cubes to the bowl. Scatter the crumbled feta and fresh mint leaves over the top.
  5. Drizzle the dressing over the salad just before serving. Toss very gently to combine, trying not to break up the feta too much. Taste and adjust seasoning if needed.

Notes

Salting the watermelon is the most important step to draw out excess juice and prevent a watery salad. Always dress the salad just before serving. For best texture, use a block of feta in brine and crumble it yourself.
