A vibrant, naturally sweetened mocktail perfect for Valentine's or Galentine's celebrations. This beautiful drink combines muddled berries, fresh citrus, and sparkling water with a hint of maple syrup, finished with a pink salt rim. It's a toast to flavor and feeling good, ready in minutes.

Ingredients

  • 1 lime wedge (for rimming glass)
  • 1 teaspoon Himalayan pink salt or coarse sugar (for rim)
  • 5-6 fresh or frozen raspberries
  • 2-3 fresh mint leaves
  • 1 ounce (2 tablespoons) fresh lime juice
  • 1/2 ounce (1 tablespoon) pure maple syrup
  • Ice cubes
  • 4-5 ounces chilled club soda or non-alcoholic sparkling wine
  • Garnish: 1 fresh raspberry, 1 small mint sprig, 1 thin blood orange slice (optional)

Instructions

  1. Prepare the glass: Run the lime wedge around the rim of a champagne flute or coupe glass. Dip the moistened rim into a shallow plate of Himalayan pink salt or sugar to coat. Set aside.
  2. Muddle the fruit: In a cocktail shaker or directly in the bottom of your prepared glass, add the raspberries and mint leaves. Gently press with a muddler or the back of a spoon to release the juices and oils. Do not over-muddle.
  3. Combine sweet and sour: Add the fresh lime juice and maple syrup to the muddled fruit. If using a shaker, add a few ice cubes, cover, and shake briefly for 5 seconds to chill and combine. If mixing in the glass, simply stir.
  4. Build the drink: Fill your salt-rimmed glass with fresh ice cubes. If you used a shaker, strain the mixture over the ice. If you mixed in the glass, it is already there.
  5. Add the sparkle: Slowly top the glass with the chilled club soda or non-alcoholic sparkling wine, pouring it down the side to preserve bubbles.
  6. Garnish and serve: Give the drink one very gentle stir. Garnish with a fresh raspberry, a mint sprig, and a blood orange slice if desired. Serve immediately.

Notes

For a pitcher (4 servings): Multiply all ingredients except the sparkling element by 4. Combine the muddled fruit mix, lime juice, and maple syrup in a large pitcher and refrigerate for up to 4 hours. When ready to serve, add ice to individual prepared glasses, pour in the base mix, and top each with sparkling water. Always add the sparkling element last to keep it fizzy. For a lower-sugar version, reduce maple syrup to 1/2 tablespoon and add an extra mashed strawberry.
