These are the ultimate game day or family meal. Crispy tater tots are layered with seasoned beef, melted cheese, and fresh toppings for maximum flavor in every bite. The secret is building them in stages to avoid soggy bites.

  • 1 (32 oz) bag frozen tater tots
  • 2 tablespoons olive oil or avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1 pound ground beef (80/20 blend) or ground turkey
  • 1 packet (1 oz) taco seasoning, or 2 tablespoons homemade blend
  • 1/3 cup water
  • 2 cups shredded Mexican blend cheese
  • 1 cup shredded sharp cheddar cheese
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 cup corn kernels (fresh, frozen/thawed, or canned/drained)
  • 1 large tomato, diced
  • 1/2 red onion, finely diced
  • 1 jalapeño, thinly sliced (seeds removed for less heat)
  • 1/2 cup sliced black olives
  • 1/4 cup chopped fresh cilantro
  • 1 cup sour cream
  • 1 cup guacamole or diced avocado
  • 1/2 cup salsa or pico de gallo

Instructions

  1. Preheat oven to 425°F (220°C). On a large rimmed baking sheet, toss frozen tater tots with oil, garlic powder, smoked paprika, and black pepper. Spread in a single layer. Bake for 20-25 minutes until golden brown and extra crispy.
  2. While tots bake, cook ground beef in a skillet over medium-high heat until no longer pink, breaking it up. Drain excess grease. Stir in taco seasoning and water. Simmer for 3-5 minutes until thickened. Set aside.
  3. Remove hot tots from oven. Immediately sprinkle half of all shredded cheeses over the tots. Evenly scatter the seasoned beef, black beans, and corn over the cheese.
  4. Top everything with the remaining cheese. Return pan to oven for 5-8 minutes until cheese is fully melted and bubbly.
  5. Remove pan and let sit for 2-3 minutes. Top with diced tomato, red onion, jalapeño slices, and black olives.
  6. Finish with dollops of sour cream and guacamole, spoonfuls of salsa, and a sprinkle of fresh cilantro. Serve immediately.

Notes

For a zesty sauce, mix 1/2 cup mayonnaise with 2 tablespoons taco seasoning and a squeeze of lime juice. Always add cold, wet toppings like sour cream and salsa after baking to prevent sogginess. For a vegetarian version, use plant-based crumble or extra beans.
