A quick and healthy dinner featuring savory ground turkey taco filling served in crisp, chilled lettuce cups. Ready in under 30 minutes, this lighter take on taco night is packed with flavor and perfect for customizing with fresh toppings.

  • 1 tablespoon olive oil or avocado oil
  • 1 pound lean ground turkey
  • 1 small yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 packet (about 2 tablespoons) taco seasoning
  • 1/2 cup water or low-sodium chicken broth
  • 1 tablespoon tomato paste
  • 1-2 heads romaine or butter lettuce, leaves separated and chilled
  • Toppings: diced avocado, pico de gallo, shredded cheese, sour cream, cilantro, lime wedges

Instructions

  1. Chill the whole heads of lettuce for 15-20 minutes, then gently separate leaves to form cups.
  2. Heat oil in a large skillet over medium-high heat. Add diced onion and cook for 3-4 minutes until softened.
  3. Add minced garlic and cook for 30 seconds until fragrant.
  4. Add ground turkey, breaking it up with a spoon. Cook for 5-7 minutes until no longer pink.
  5. Sprinkle taco seasoning over turkey. Add tomato paste and water. Stir to combine.
  6. Reduce heat to medium-low and simmer for 3-5 minutes until liquid reduces slightly.
  7. Spoon warm turkey filling into chilled lettuce leaves. Serve with desired toppings.

Notes

Chilling the lettuce is key to preventing soggy wraps. For a dairy-free version, omit cheese and sour cream or use plant-based alternatives. The turkey filling can be made ahead and frozen for up to 3 months.
