This Tropical Green Detox Smoothie tastes like a piña colada but is packed with greens and nutrients. It is a creamy, refreshing drink that hides spinach so well you will forget it is healthy.

Ingredients

  • 1 cup unsweetened coconut milk (from carton)
  • 2 cups fresh spinach
  • 1 cup frozen pineapple chunks
  • 1 cup frozen mango chunks
  • 1/2 frozen banana
  • 1 inch fresh ginger, peeled
  • Juice of 1/2 lime
  • Optional: 1 scoop vanilla or unflavored protein powder
  • Optional: 1 tablespoon chia seeds
  • Optional: honey or maple syrup to taste

Instructions

  1. Add the coconut milk to the blender first to help blending.
  2. Add the fresh spinach on top of the liquid.
  3. Add the frozen pineapple, frozen mango, and frozen banana.
  4. Add the peeled ginger and lime juice.
  5. If using, add protein powder and chia seeds.
  6. Blend on high for 30 to 45 seconds until completely smooth.
  7. If too thick, add a splash more coconut milk and blend again. If too thin, add a few ice cubes or more frozen fruit.
  8. Pour into a glass and serve immediately.

Notes

For meal prep, portion fruit and spinach into freezer bags. In the morning, dump the bag into the blender with the liquid and blend. This smoothie is best enjoyed fresh. For a thicker smoothie bowl, use less liquid and top with granola, coconut flakes, and fresh berries.
