A gourmet breakfast that feels like dessert. Layer simple ingredients in a jar the night before for a no-cook, protein-powder-free masterpiece. Wake up to creamy coffee-infused oats with a rich cocoa finish.

  • 1/2 cup old-fashioned rolled oats
  • 1/2 cup strong brewed coffee or espresso, cooled
  • 1/4 cup unsweetened almond milk (or milk of choice)
  • 2 tablespoons maple syrup or agave nectar, divided
  • 3/4 teaspoon vanilla extract, divided
  • 1 tablespoon chia seeds
  • 1/2 cup plain unsweetened vegan yogurt (or Greek yogurt)
  • 1 tablespoon unsweetened cocoa powder for dusting

Instructions

  1. In a jar or container, combine rolled oats, cooled coffee, almond milk, 1 tablespoon maple syrup, 1/2 teaspoon vanilla extract, and chia seeds. Stir vigorously until well combined.
  2. In a separate small bowl, whisk together vegan yogurt, remaining 1 tablespoon maple syrup, and remaining 1/4 teaspoon vanilla extract until smooth and creamy.
  3. Spoon the creamy yogurt mixture evenly over the top of the coffee oat base. Do not stir.
  4. Place the lid on the jar and refrigerate for at least 6 hours, or ideally overnight.
  5. Just before serving, dust the top generously with unsweetened cocoa powder.

Notes

For best texture, use old-fashioned rolled oats, not quick oats. Let the jar sit at room temperature for 10 minutes before eating to enhance flavors. Store in refrigerator for up to 4 days; add cocoa powder only before serving.
