  • 1 large yellow onion, diced
  • 1 large red bell pepper, diced
  • 2 medium sweet potatoes (about 1.5 lbs), peeled and cut into ½-inch cubes
  • 3 cloves garlic, minced
  • 12 ounces cooked corned beef, chopped into bite-sized pieces
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prep the vegetables. Peel and cube the sweet potatoes into even ½-inch pieces. Dice the onion and bell pepper. Mince the garlic.
  2. Heat oil in a large, heavy-bottomed skillet over medium heat. Add the diced onion and bell pepper. Cook for 5-7 minutes, stirring occasionally, until softened and fragrant.
  3. Add the cubed sweet potatoes to the skillet. Stir to combine. Let cook undisturbed for 4-5 minutes to sear, then cook for another 10-12 minutes, stirring every few minutes, until tender and golden brown.
  4. Push the vegetable mixture to the sides of the pan. Add the minced garlic, smoked paprika, and thyme to the center. Let sizzle for 30 seconds until fragrant, then mix everything together.
  5. Add the chopped corned beef to the skillet. Stir to combine and heat through, about 3-4 minutes. Season generously with salt and pepper.
  6. For extra crispiness, press the hash down gently with a spatula and let cook undisturbed for 2-3 minutes. Garnish with fresh parsley and serve immediately.
