A vibrant celebration of spring featuring crisp spinach, sweet strawberries, crunchy pecans, and tangy feta, all tied together with a simple sweet and tangy dressing. This salad is quick to make, stunning to look at, and disappears fast at any gathering.

Ingredients

  • 6 cups fresh baby spinach, washed and thoroughly dried
  • 1 pint fresh strawberries, hulled and sliced
  • 1/2 cup candied pecans
  • 1/4 cup crumbled feta cheese
  • 1/4 small red onion, very thinly sliced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 small clove garlic, minced
  • Salt and freshly ground black pepper to taste

Instructions

  1. Prepare the spinach by washing it and drying it completely using a salad spinner or clean kitchen towels.
  2. Make the dressing by whisking together the olive oil, apple cider vinegar, honey, Dijon mustard, and minced garlic in a small bowl. Season with salt and pepper.
  3. In a large serving bowl, combine the dried spinach, sliced strawberries, red onion, candied pecans, and crumbled feta.
  4. Just before serving, drizzle about half of the dressing over the salad and toss gently to coat. Add more dressing as needed and serve immediately.

Notes

The key to preventing a soggy salad is to dry the spinach thoroughly and only dress it right before serving. All components can be prepped separately up to a day ahead. For a dairy-free version, omit the feta or use a vegan alternative.
