This vibrant salad is a perfect balance of sweet strawberries, fresh spinach, salty feta, and crunchy almonds, all tossed in a tangy homemade poppy seed dressing. It's a simple, elegant dish that's both nourishing and delicious, ideal for a light lunch or as a standout side.

  • 6 cups fresh baby spinach, washed and dried
  • 1 pound fresh strawberries, hulled and sliced
  • 1/2 cup crumbled feta cheese
  • 1/3 cup sliced almonds, toasted
  • 1/4 small red onion, very thinly sliced
  • 1/3 cup extra virgin olive oil
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 1 tablespoon poppy seeds
  • 1 teaspoon Dijon mustard
  • 1 small shallot, minced (about 1 tablespoon)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Toast the almonds in a dry skillet over medium-low heat for 3-5 minutes until fragrant and lightly golden. Transfer to a plate to cool.
  2. Prepare the salad components: ensure spinach is thoroughly dry. Slice the strawberries and red onion.
  3. Make the dressing by whisking together olive oil, apple cider vinegar, honey, poppy seeds, Dijon mustard, minced shallot, salt, and pepper in a small bowl or jar until emulsified.
  4. In a large salad bowl, combine the spinach, strawberries, feta, toasted almonds, and red onion.
  5. Just before serving, drizzle the dressing over the salad and toss gently to combine. Serve immediately.

Notes

For best results, do not dress the salad until ready to serve to prevent wilting. Soak red onion slices in ice water for 10 minutes to mellow their flavor if desired. Dressing can be made up to 3 days ahead and stored in the fridge.
