  • 1 1/2 cups old-fashioned rolled oats (gluten-free if needed)
  • 1 cup almond flour
  • 1/2 cup creamy almond butter or peanut butter
  • 1/3 cup pure maple syrup or raw honey
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon fine sea salt
  • 2/3 cup mix-ins (e.g., dark chocolate chips and dried tart cherries)

Instructions

  1. In a large bowl, whisk together the almond butter, maple syrup, egg, and vanilla until smooth.
  2. Add the oats, almond flour, baking soda, and salt. Fold together with a spatula until a thick, sticky dough forms. Gently fold in your chosen mix-ins.
  3. Cover the bowl and refrigerate the dough for at least 30 minutes, or ideally overnight.
  4. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  5. Scoop dough into 1.5-tablespoon balls and place on the sheet, spacing 2 inches apart. Press down slightly if desired.
  6. Bake for 10-12 minutes, until edges are set and lightly golden but centers are still soft.
  7. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For best texture, do not skip chilling the dough. Cookies can be stored in an airtight container at room temp for 4 days, in the fridge for a week, or frozen. For a vegan version, use a flax egg. For nut-free, use sunflower seed butter and oat flour.
