This one-pan Smoky Sausage Sweet Potato and Spinach Hash is a quick and easy summer dinner that comes together in under 40 minutes. Smoky sausage, caramelized sweet potatoes, and wilted spinach create a comforting and balanced meal that is perfect for busy weeknights.

  • 1 pound smoked sausage or kielbasa, sliced into half moons
  • 2 medium sweet potatoes, peeled and cut into 1/2 inch cubes
  • 3 cups fresh spinach, roughly chopped
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: pinch of red pepper flakes for heat

Instructions

  1. Prep your ingredients: Slice the sausage into even half moons. Dice the sweet potatoes into uniform cubes about half an inch thick. Chop the onion and mince the garlic. Have the spinach ready by the stove.
  2. Brown the sausage: Heat one tablespoon of olive oil in a large cast iron skillet over medium high heat. Add the sausage slices in a single layer. Let them cook undisturbed for 3 to 4 minutes until deeply browned on one side. Flip and cook another 2 minutes. Remove the sausage to a plate and set aside.
  3. Cook the sweet potatoes: Add the remaining tablespoon of olive oil to the same skillet. Toss in the sweet potato cubes and spread them out. Let them cook for 5 to 6 minutes without stirring. Flip the cubes and cook another 5 minutes until tender and golden.
  4. Saute the aromatics: Push the sweet potatoes to one side of the pan. Add the diced onion to the empty space and cook for 3 minutes until translucent. Stir in the garlic and smoked paprika for 30 seconds until fragrant.
  5. Combine everything: Return the sausage to the skillet. Add the spinach in handfuls, stirring gently until it wilts. Season with salt and pepper. Cook for 2 more minutes until everything is hot and well combined.

Notes

Pro tip: If your sweet potatoes are browning too quickly, lower the heat to medium. You want them tender inside, not burnt outside. For a lighter take, use turkey sausage. For a vegetarian version, substitute with smoked tofu or hearty mushrooms. Top with a fried egg for extra richness.
