This easy slow cooker turkey chili is the ultimate set-and-forget comfort meal. Lean ground turkey simmers with beans, tomatoes, and warm spices for a hearty, flavorful dinner. Perfect for busy days, it tastes even better as leftovers.

  • 1.5 lbs lean ground turkey
  • 1 large yellow onion, diced
  • 1 large bell pepper, diced
  • 3 cloves garlic, minced
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can diced tomatoes, with juices
  • 1 (8 oz) can tomato sauce
  • 1 cup low-sodium chicken or vegetable broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground turkey, breaking it up with a spoon. Cook until no longer pink, about 5-7 minutes.
  2. Add diced onion and bell pepper to the same skillet. Cook for 4-5 minutes until softening. Add minced garlic and cook for 1 more minute until fragrant.
  3. Transfer the browned turkey and vegetable mixture to a 6-quart or larger slow cooker.
  4. Add the drained kidney beans, black beans, diced tomatoes with juices, tomato sauce, and broth to the slow cooker.
  5. Sprinkle in the chili powder, cumin, smoked paprika, oregano, optional cayenne, salt, and black pepper. Stir everything well to combine.
  6. Cover and cook on LOW for 6 hours or on HIGH for 3 hours.
  7. After cooking, stir the chili and taste. Adjust seasoning with more salt or pepper if needed. Serve with desired toppings.

Notes

Do not skip browning the turkey, as it adds essential flavor. For a thicker chili, remove the lid for the last 30 minutes of cooking. This chili freezes very well for up to 3 months.
