Ingredients

Scale
  • 1.5 to 2 pounds flank steak or sirloin steak, thinly sliced against the grain
  • 1/2 cup low-sodium soy sauce
  • 1/3 cup beef broth or water
  • 1/4 cup honey or brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/2 teaspoon black pepper
  • 3 tablespoons cornstarch
  • 1/4 cup cold water
  • 4-5 cups fresh broccoli florets
  • 1-2 teaspoons sesame seeds, for garnish
  • 2 green onions, thinly sliced, for garnish

Instructions

  1. Place the thinly sliced beef in the bottom of a 4-6 quart slow cooker.
  2. In a medium bowl, whisk together soy sauce, beef broth, honey, rice vinegar, sesame oil, garlic, ginger, and black pepper. Pour over the beef and stir to coat.
  3. Cover and cook on LOW for 3-4 hours or on HIGH for 1.5-2 hours, until beef is tender.
  4. In a small bowl, whisk cornstarch and cold water into a smooth slurry. Stir slurry into the hot liquid in the slow cooker.
  5. Increase heat to HIGH if on LOW, cover, and cook for 20-30 minutes until sauce thickens.
  6. Stir in broccoli florets, submerging in sauce. Cover and cook on HIGH for 20-30 minutes more, until broccoli is crisp-tender.
  7. Serve hot over rice, garnished with green onions and sesame seeds.

Notes

Slice beef against the grain for maximum tenderness. For gluten-free, use tamari. Frozen broccoli can be added in the last 30-45 minutes. Do not add cornstarch directly to hot liquid; always make a cold slurry first.
