These quick and easy Shredded BBQ Chicken Quesadillas combine smoky-sweet shredded chicken with gooey melted cheese in a crispy golden tortilla. Perfect for busy weeknights, they come together in under 20 minutes using leftover chicken or rotisserie bird.

  • 2 cups cooked, shredded chicken (leftover rotisserie or grilled chicken works great)
  • 1 cup your favorite BBQ sauce (choose a smoky or sweet variety)
  • 2 cups shredded cheddar or Monterey Jack cheese
  • 4 large flour tortillas (burrito size for extra filling)
  • 2 tablespoons butter, softened
  • 1/4 cup chopped red onion (optional, for crunch)
  • 1/4 cup chopped fresh cilantro (optional, for brightness)

Instructions

  1. In a medium bowl, combine the shredded chicken with 3/4 cup of BBQ sauce. Stir until every strand is coated. If it looks dry, add a tablespoon more sauce.
  2. Lay a tortilla flat on a clean surface. Spread a thin layer of cheese over half of the tortilla, leaving a small border at the edge. Spoon a generous portion of the BBQ chicken mixture on top of the cheese. Add a sprinkle of red onion and cilantro if using. Top with another layer of cheese, then fold the empty half over the filling. Press gently to seal.
  3. Heat a large skillet or cast iron pan over medium heat. Lightly butter the outside of each quesadilla. Place it in the hot pan and cook for 2 to 3 minutes per side, until the tortilla is golden brown and crispy and the cheese is fully melted. Flip carefully using a spatula.
  4. Transfer the cooked quesadilla to a cutting board and let it rest for one minute. Slice into wedges with a sharp knife or pizza cutter. Serve with extra BBQ sauce for dipping and a side of sour cream or ranch.

Notes

If your tortilla cracks while folding, warm it in the microwave for 10 seconds first. For best results, reheat leftover quesadillas in a skillet over medium heat for 2 minutes per side to keep the crunch.
