These festive, soft, and chewy treats are the perfect no-bake dessert for St. Patrick's Day. Made with crispy rice cereal, marshmallows, and a touch of green food coloring, they are shaped with a shamrock cookie cutter for a fun holiday twist. They come together quickly and stay deliciously soft for days.

  • 4 tablespoons unsalted butter
  • 1 (10-ounce) bag mini marshmallows
  • 1 teaspoon pure vanilla extract
  • 1 pinch fine sea salt
  • 6 cups crispy rice cereal
  • Green gel food coloring, as needed
  • White chocolate chips or melting wafers, for decorating (optional)
  • Green sprinkles, for decorating (optional)

Instructions

  1. Generously butter a 9x13 inch baking dish or line it with parchment paper.
  2. In a large pot, melt the butter over low heat. Add the mini marshmallows and stir constantly with a silicone spatula until about 90% melted.
  3. Remove the pot from the heat. The residual heat will finish melting the marshmallows. Stir in the vanilla extract, salt, and green gel food coloring until the color is even and vibrant.
  4. Add the crispy rice cereal to the pot. Gently fold until all the cereal is evenly coated with the marshmallow mixture. Be careful not to crush the cereal.
  5. Quickly transfer the mixture to the prepared pan. Lightly butter your hands or the back of a measuring cup and press the mixture into an even layer. Press gently to avoid compacting it too much, which ensures a soft, chewy texture.
  6. Let the treats cool and set at room temperature for 45-60 minutes.
  7. Once completely set, use a shamrock-shaped cookie cutter to stamp out treats. Re-roll and press the scraps to cut more shapes.
  8. For optional decoration, melt white chocolate and drizzle over the shamrocks or dip one corner, then immediately add green sprinkles. Let the chocolate set before serving.

Notes

Use gel food coloring for vibrant color without altering texture. Press the mixture gently into the pan for a soft, chewy bite. Store in an airtight container at room temperature for up to 5 days. For gluten-free treats, ensure your cereal is certified gluten-free.
