  • 1 pound Italian sausage links (mild or hot)
  • 3 large bell peppers, any color, sliced into 1-inch strips
  • 1 large red onion, sliced into 1-inch wedges
  • 1 pound baby potatoes, halved
  • 3 tablespoons olive oil
  • 1 tablespoon Italian seasoning
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss potatoes, bell peppers, and onion with olive oil, Italian seasoning, garlic, smoked paprika, salt, and black pepper.
  3. Arrange seasoned vegetables in a single layer on a large rimmed baking sheet. Nestle sausage links among the veggies.
  4. Roast for 30-35 minutes. At the 15-minute mark, remove pan, stir vegetables, and flip sausages.
  5. Bake until potatoes are tender, veggies are charred at edges, and sausages are cooked through.
  6. Let rest for 5 minutes. Garnish with fresh parsley before serving.

Notes

For even cooking, cut vegetables to match the size of the sausage links. Do not overcrowd the pan; use two sheets if needed. Recipe is easily adaptable: use chicken sausage, swap potatoes for sweet potatoes, or add other veggies like broccoli in the last 15 minutes.
