  • 1 can (10 oz) Rotel diced tomatoes and green chilies, drained
  • 2 packages (8 oz each) cream cheese, softened
  • 1 packet (1 oz) ranch seasoning mix
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 2 green onions, finely chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika (optional)

Instructions

  1. Soften cream cheese by leaving it at room temperature or microwaving in 10-second intervals until pliable.
  2. In a medium bowl, mix softened cream cheese with the ranch seasoning using a mixer or sturdy spoon until smooth.
  3. Fold in drained Rotel tomatoes, sour cream, garlic powder, and 3/4 cup shredded cheddar. Stir until fully combined.
  4. Mix in most of the green onions, saving a few for garnish.
  5. Transfer to a serving bowl. Sprinkle with remaining cheddar cheese, green onions, and optional smoked paprika.
  6. Serve cold, or heat gently in the oven at 350°F for 10–15 minutes until just warmed and bubbly around the edges.

Notes
