- 1 can (10 oz) Rotel diced tomatoes and green chilies, drained
- 2 packages (8 oz each) cream cheese, softened
- 1 packet (1 oz) ranch seasoning mix
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 2 green onions, finely chopped
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika (optional)
Instructions
- Soften cream cheese by leaving it at room temperature or microwaving in 10-second intervals until pliable.
- In a medium bowl, mix softened cream cheese with the ranch seasoning using a mixer or sturdy spoon until smooth.
- Fold in drained Rotel tomatoes, sour cream, garlic powder, and 3/4 cup shredded cheddar. Stir until fully combined.
- Mix in most of the green onions, saving a few for garnish.
- Transfer to a serving bowl. Sprinkle with remaining cheddar cheese, green onions, and optional smoked paprika.
- Serve cold, or heat gently in the oven at 350°F for 10–15 minutes until just warmed and bubbly around the edges.
Notes
Substitute Greek yogurt for sour cream for a protein boost. Use plant-based alternatives for dairy-free. This dip can be served hot or cold and pairs well with tortilla chips, veggies, or as a sandwich spread.
