Crisp cucumber rounds topped with a light and herbed cream cheese spread. These elegant bites are a quick, healthy, and universally loved appetizer or snack.

Ingredients

Scale
  • 1 large English cucumber
  • 8 ounces full-fat cream cheese, softened
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1 small clove garlic, minced
  • 1 teaspoon fresh lemon juice
  • 0.25 teaspoon kosher salt, plus more for cucumbers
  • 0.25 teaspoon freshly cracked black pepper
  • For garnish (optional): Everything bagel seasoning, smoked salmon bits, microgreens

Instructions

  1. Slice the cucumber into 0.25-inch thick rounds. Arrange on a paper towel-lined tray, sprinkle lightly with salt, and let sit for 5-10 minutes to draw out moisture. Pat dry thoroughly.
  2. In a medium bowl, combine the softened cream cheese, dill, chives, garlic, lemon juice, salt, and pepper. Mix until smooth and fluffy.
  3. Spread or pipe a dollop of the herbed cream cheese mixture onto each dried cucumber round.
  4. Garnish as desired and arrange on a serving platter. Serve immediately for best texture.

Notes

Do not skip salting and drying the cucumber slices, as this prevents sogginess. For a make-ahead option, prepare the components separately and assemble up to 1 hour before serving. Use vegan cream cheese for a dairy-free version.
