These hearty, cheesy bites are the ultimate quick appetizer, made with simple pantry staples like sausage, cheese, and baking mix. They are perfect for game day, impromptu gatherings, or a satisfying snack, baking up golden and delicious in under 30 minutes.

Ingredients

  • 1 lb ground pork sausage (mild or hot)
  • 2 cups shredded sharp cheddar cheese
  • 1 1/2 cups Bisquick or all-purpose baking mix
  • 1/2 cup sour cream
  • 1 tbsp ranch seasoning mix (or 1 tsp each dried dill, garlic powder, onion powder)
  • 1/4 tsp black pepper

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ground sausage, shredded cheddar cheese, baking mix, sour cream, ranch seasoning, and black pepper.
  3. Use your hands to mix everything together until just combined. Be careful not to overmix.
  4. Roll the mixture into 1-inch balls and place them on the prepared baking sheet, leaving a little space between each.
  5. Bake for 18-22 minutes, or until the sausage balls are golden brown and cooked through.
  6. Let cool for 5 minutes on the sheet before serving warm.

Notes

For a gluten-free version, use a certified GF baking mix. These freeze beautifully: freeze unbaked balls on a tray, then transfer to a bag. Bake from frozen, adding 3-5 extra minutes. For extra flavor, add a pinch of cayenne or a tablespoon of chopped fresh chives.
