These cookies are incredibly soft and chewy, thanks to the magic of instant pudding mix. They have a gentle, nutty pistachio flavor and are flecked with green, making them a festive and easy treat. Perfect for any occasion, especially St. Patrick's Day.

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 box (3.4 oz) instant pistachio pudding mix
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, beat softened butter and granulated sugar with a mixer on medium speed for 2-3 minutes until light and fluffy.
  3. Beat in eggs one at a time, then mix in vanilla extract. Scrape down bowl sides.
  4. In a separate medium bowl, whisk together flour, instant pistachio pudding mix, baking soda, and salt.
  5. With mixer on low, gradually add dry ingredients to wet ingredients. Mix just until combined.
  6. Fold in white chocolate chips with a spatula.
  7. Scoop dough (about 1.5 tablespoons each) onto prepared sheets, spacing 2 inches apart.
  8. Bake for 10-12 minutes until edges are set but centers are soft and puffy.
  9. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use instant pudding mix, not cook-and-serve. Do not overbake for soft texture. Dough can be frozen for later use. For gluten-free, use a 1:1 gluten-free flour blend.
