These are the ultimate quick and easy no-bake dessert bars. A simple, foolproof method using residual heat to melt peanut butter into marshmallows creates perfectly chewy, gooey treats every time.

Ingredients

  • 6 cups Rice Krispies cereal
  • 1 (10 oz) bag mini marshmallows
  • 3/4 cup creamy peanut butter (like Jif or Skippy)
  • 3 tablespoons unsalted butter
  • 1/4 teaspoon fine sea salt
  • 1/2 cup semi-sweet chocolate chips (optional)

Instructions

  1. Lightly grease an 8x8 or 9x9 inch baking dish. Measure cereal into a large bowl and set aside.
  2. In a large pot, melt butter over low heat. Add mini marshmallows and stir constantly until just about completely melted and smooth.
  3. Remove pot from heat. Immediately stir in peanut butter and salt until fully incorporated into a silky blend.
  4. Quickly pour marshmallow mixture over the cereal. Gently fold with a spatula until cereal is evenly coated.
  5. Transfer mixture to the prepared pan. Lightly grease hands or a flat cup and press mixture into an even layer. Let set at room temperature for 1 hour.
  6. If using, melt chocolate chips and drizzle over set bars. Let chocolate set briefly before slicing into squares.

Notes

Use standard creamy peanut butter, not natural/drippy kind, for best texture. Do not use high heat to melt marshmallows. Press mixture gently into pan; pressing too hard makes bars dense. Store in an airtight container at room temperature for up to 5 days.
