Ingredients

Scale
  • 1.5 pounds ground chicken
  • 1 small yellow onion, grated
  • 0.33 cup plain breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 12 slider buns
  • 6 slices white cheddar cheese, halved
  • 1 cup shredded red cabbage
  • 1 cup shredded green cabbage
  • 0.5 cup shredded carrots
  • 0.33 cup mayonnaise
  • 2 tablespoons plain Greek yogurt
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • Butter for toasting

Instructions

  1. Make the slaw by whisking mayonnaise, yogurt, vinegar, honey, salt, and pepper. Toss with red cabbage, green cabbage, and carrots. Refrigerate.
  2. In a large bowl, combine ground chicken, grated onion, breadcrumbs, egg, garlic, Worcestershire, paprika, oregano, salt, and pepper. Mix gently until just combined.
  3. Divide mixture into 12 portions and shape into patties.
  4. Cook patties in a skillet over medium heat for 4-5 minutes per side until golden and cooked through.
  5. In the last minute, add a half-slice of cheese to each patty and cover to melt.
  6. Butter and toast the slider buns until golden.
  7. Assemble sliders by placing a patty on the bottom bun, topping with slaw, and adding the top bun.

Notes

Do not skip grating the onion with its juices, as this keeps the patties moist. Avoid overmixing the chicken. The slaw can be made a few hours ahead. For gluten-free, use gluten-free breadcrumbs and buns.
