  • 1 (8 oz) wheel of brie cheese
  • 1/4 cup hot pepper jelly
  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup shredded sharp cheddar
  • 2 tbsp chopped fresh chives
  • 24 mini potatoes (such as baby Yukon Gold)
  • 1 tbsp olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 (2.1 oz) package frozen mini phyllo pastry shells (15 count)
  • 4 slices cooked bacon, crumbled
  • 1/4 cup cranberry sauce
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Line two rimmed baking sheets with parchment paper.
  2. Prepare Mini Baked Potatoes: Toss mini potatoes with olive oil, salt, and pepper. Spread on one baking sheet. Bake for 15 minutes.
  3. Prepare Cheesy Thumbprint Appetizers: In a bowl, mix softened cream cheese, shredded cheddar, and half the chives. Spoon mixture into frozen phyllo shells, creating a small well in the center. Fill each well with about 1/2 tsp hot pepper jelly.
  4. Prepare Mini Brie Bites: Slice brie wheel into 1-inch cubes. Place on the second baking sheet. Top each cube with a small dollop of cranberry sauce.
  5. After potatoes have baked 15 minutes, remove sheet. Add the tray of phyllo cups and brie bites to the oven. Bake all items for 8-10 more minutes, or until brie is melted, phyllo is golden, and potatoes are tender.
  6. Remove from oven. Let cool for 5 minutes. Top potatoes with a dollop of the remaining cream cheese mixture, crumbled bacon, and remaining chives. Garnish platter with fresh parsley. Serve warm.

Notes

For make ahead, assemble phyllo cups and brie bites, cover, and refrigerate up to a day. Bake straight from fridge, adding 2-3 minutes. For gluten free, use gluten free crackers or roasted sweet potato rounds instead of phyllo shells.
