  • 1 cup granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract

  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • For the Cream Cheese Frosting:
  • 8 ounces full-fat cream cheese, softened
  • ½ cup (1 stick) unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • For the Fruit Topping:
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries or blackberries
  • 1 kiwi, peeled and sliced
  • Optional: ¼ cup apricot jam, warmed, for glaze

Instructions

  1. Preheat oven to 350°F (175°C). In a large bowl, cream the softened butter and granulated sugar until light and fluffy, about 2-3 minutes. Beat in the egg and vanilla extract until combined.
  2. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
  3. Lightly grease a 12-inch pizza pan or large baking sheet. Press the dough evenly across the pan to the edges. Prick the dough all over with a fork.
  4. Bake for 12-15 minutes, until the edges are just starting to turn light golden brown. Let the crust cool completely on the pan.
  5. While the crust cools, make the frosting. In a medium bowl, beat the softened cream cheese and butter together until smooth and lump-free.
  6. Gradually add the powdered sugar, vanilla, and a pinch of salt. Beat on medium speed until the frosting is light and spreadable.
  7. Once the crust is completely cool, spread the cream cheese frosting over it in an even layer, leaving a small border.
  8. Arrange the prepared, dry fruit on top of the frosting in your desired pattern.
  9. For an optional glossy finish, gently brush the arranged fruit with warmed apricot jam.
  10. Slice into wedges and serve. For best results, assemble within 1-2 hours of serving.

Notes

Ensure the crust is completely cool before adding frosting to prevent melting. Use softened cream cheese and butter for a smooth frosting. Pat fruit dry after washing to prevent a soggy crust. The baked crust can be made ahead and frozen for up to 2 months.
