This classic dessert is a moist, vibrant, and joyful treat that brings a touch of nostalgic fun to any gathering. A simple white cake is infused with strawberry gelatin and topped with a fluffy vanilla pudding frosting. It is easy to make and always a crowd-pleaser.

  • 1 box (15.25 oz) white or yellow cake mix, plus ingredients listed on box
  • 1 box (3 oz) strawberry flavored gelatin
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 cup cold milk
  • 1 container (8 oz) frozen whipped topping, thawed
  • Fresh strawberries, for garnish (optional)

Instructions

  1. Prepare and bake the cake mix in a 9x13 inch pan according to package directions. Let cool in the pan on a wire rack for 20-30 minutes until slightly warm.
  2. In a medium bowl, whisk the strawberry gelatin with the boiling water for 2 minutes until fully dissolved. Stir in the cold water.
  3. Use the handle of a wooden spoon or a large fork to poke holes all over the warm cake, going to the bottom.
  4. Slowly pour the prepared gelatin mixture evenly over the cake, aiming for the holes.
  5. Cover the pan loosely with plastic wrap and refrigerate for at least 4 hours, or overnight.
  6. Just before serving, make the topping. In a large bowl, whisk the instant pudding mix with the cold milk for 2 minutes until it thickens.
  7. Gently fold in the thawed whipped topping until smooth and combined.
  8. Spread the topping evenly over the chilled cake. Garnish with fresh strawberries if desired, then slice and serve.

Notes

The cake must be slightly warm when poked for best absorption. Do not skip the 4-hour chill time for the gelatin to set properly. Store covered in the refrigerator for 3-4 days.
