  • 1 cup fresh raspberries
  • 1/2 cup fresh blackberries
  • 1/4 cup apricot jam or apple jelly (for optional glaze)

Instructions

  1. Preheat oven to 350°F (175°C). In a large bowl, cream softened butter and granulated sugar until light and fluffy. Beat in egg and 1 tsp vanilla extract.
  2. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to wet ingredients, mixing until a soft dough forms.
  3. Press dough evenly into a 12-inch pizza pan or parchment-lined baking sheet to form a 1/4-inch thick crust. Prick all over with a fork. Bake for 12-15 minutes until edges are lightly golden. Cool completely.
  4. For the filling, beat softened cream cheese, powdered sugar, and 1 tsp vanilla until smooth and lump-free.
  5. In another bowl, whip cold heavy cream until stiff peaks form. Gently fold whipped cream into cream cheese mixture until no streaks remain.
  6. Spread cheesecake filling evenly over the cooled crust, leaving a small border.
  7. Arrange washed and dried berries on top in a decorative pattern.
  8. For optional glaze, gently warm apricot jam with 1 tsp water and brush lightly over berries.
  9. Refrigerate assembled pizza for at least 1 hour before slicing and serving.
