  • 1 (16.5 oz) roll refrigerated sugar cookie dough
  • 1 (8 oz) block cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 (8 oz) container frozen whipped topping, thawed
  • 1 1/2 to 2 cups assorted fresh fruit (strawberries, blueberries, kiwi, etc.)
  • 1/4 cup apricot preserves or apple jelly (optional, for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Press the cookie dough evenly into a greased 12-inch pizza pan or baking sheet lined with parchment paper to form a 1/4-inch thick circle.
  2. Bake the crust for 10-12 minutes until edges are light golden brown. Let it cool completely on the pan.
  3. While crust cools, beat the softened cream cheese until smooth. Add powdered sugar and vanilla extract and beat until combined.
  4. Gently fold the thawed whipped topping into the cream cheese mixture with a spatula until uniform and fluffy. Do not overmix.
  5. Once the cookie crust is completely cool, spread the creamy frosting over it in an even layer, leaving a small border.
  6. Wash, dry, and slice the fresh fruit. Arrange it decoratively over the frosting layer.
  7. For an optional glossy glaze, warm the apricot preserves in the microwave for 15-20 seconds until liquid. Lightly brush it over the arranged fruit.
  8. Refrigerate the assembled pizza for at least 1 hour to set before slicing and serving.

Notes

Ensure the cookie crust is completely cool before adding frosting to prevent melting. Thoroughly dry fruit after washing to avoid a watery topping. For make-ahead, bake the crust and prepare the frosting a day in advance, then assemble up to 3-4 hours before serving.
