These No Bake S'mores Cookie Bars require no oven and only five ingredients. You simply mix, press, and chill for a gooey, chocolatey dessert that tastes like a campfire memory. Perfect for hot summer days or busy weeknights.

  • 2 cups graham cracker crumbs (about 14 full sheets)
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 1/2 cups semi-sweet chocolate chips
  • 2 cups mini marshmallows

Instructions

  1. In a medium mixing bowl, combine graham cracker crumbs and sugar. Pour melted butter over top and stir with a fork until every crumb is coated. The mixture should look like wet sand and hold together when pressed.
  2. Press the mixture firmly into an 8x8 inch baking dish lined with parchment paper. Use the bottom of a measuring cup to pack it down evenly.
  3. Place semi-sweet chocolate chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each, until smooth and glossy (about 1-2 minutes total). Do not overheat.
  4. Pour melted chocolate over the prepared crust and spread into an even layer with a spatula.
  5. While the chocolate is still warm, scatter mini marshmallows evenly over the top. Press them down gently so they stick.
  6. Refrigerate uncovered for at least 45 minutes until set. For faster setting, freeze for 20 minutes.
  7. Once set, lift bars out using parchment paper overhang. Place on a cutting board and slice into squares with a sharp knife. Wipe knife between cuts for cleaner edges.

Notes

For dairy-free, use vegan butter and dairy-free chocolate chips. For gluten-free, use gluten-free graham crackers. Store in an airtight container in the refrigerator for up to one week, or freeze for up to three months.
