This stunning dessert requires no oven for the creamy filling. A baked sugar cookie crust is topped with a light cheesecake layer and fresh berries for a perfect summer treat that comes together quickly.

  • 1 (16 ounce) package refrigerated sugar cookie dough
  • 2 tablespoons all-purpose flour, for dusting
  • 1 (8 ounce) block full-fat cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup heavy whipping cream, cold
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 1/2 cup fresh blackberries
  • 1/4 cup apricot jam or apple jelly
  • 1 tablespoon water

Instructions

  1. Preheat oven to 350°F (175°C). Lightly dust a surface with flour and press cookie dough into a 1/4-inch thick circle. Transfer to a parchment-lined pizza pan, forming a slight edge. Bake for 10-12 minutes until golden. Cool completely.
  2. Beat softened cream cheese until smooth, about 2 minutes. Add powdered sugar and vanilla; beat until combined.
  3. In a separate bowl, whip cold heavy cream to stiff peaks. Gently fold whipped cream into cream cheese mixture until no streaks remain.
  4. Spread cheesecake filling evenly over the cooled crust, leaving a small border.
  5. Arrange strawberries, blueberries, raspberries, and blackberries over the filling.
  6. Warm apricot jam with water for 15-20 seconds. Brush gently over berries.
  7. Refrigerate for at least 2 hours, or until filling is set, before slicing.

Notes

Ensure crust is completely cool before adding filling. Soften cream cheese at room temperature for a lump-free filling. Chill thoroughly for clean slices. Customize with seasonal fruits.
