These savory-sweet bites feature a ring of kielbasa sliced hasselback-style and baked with a sticky, tangy mustard glaze. They are the ultimate easy, crowd-pleasing appetizer, ready in about 30 minutes with minimal ingredients.

  • 1 (14-16 oz) ring Polska kielbasa or smoked sausage
  • 1/4 cup Dijon mustard
  • 1/4 cup packed light brown sugar
  • 2 tablespoons pure maple syrup
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • Freshly chopped parsley or chives, for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a small baking sheet with parchment paper.
  2. Place kielbasa on a cutting board. Make cuts about 1/4-inch apart along the top and sides, being careful not to cut all the way through.
  3. In a small bowl, whisk together Dijon mustard, brown sugar, maple syrup, apple cider vinegar, smoked paprika, and garlic powder until smooth.
  4. Place sliced kielbasa on the prepared baking sheet. Brush about two-thirds of the glaze all over the sausage, getting it into the slices. Reserve remaining glaze.
  5. Bake for 20-25 minutes, until heated through and glaze is bubbling and caramelized.
  6. About 5 minutes before done, remove from oven and brush with reserved glaze. Return to oven to finish baking.
  7. Let cool for 1-2 minutes. Slice into individual bites. Garnish with parsley or chives if desired. Serve warm.

Notes

Use chopsticks on either side of the sausage as a guide to avoid cutting all the way through. The vinegar is crucial for balancing the sweetness. Glazing in two stages ensures the best caramelization and flavor.
