  • 1 sheet frozen puff pastry, thawed but cold (or 1 package pre-baked phyllo shells)
  • 1 (8 oz) wheel brie cheese
  • All-purpose flour, for dusting
  • 1 large egg
  • 1/4 cup fig jam, cranberry sauce, or topping of choice
  • Optional garnishes: fresh thyme, cracked black pepper, chopped nuts, hot honey

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a 24-cup mini muffin tin.
  2. For easier cutting, place the whole brie wheel in the freezer for 15-20 minutes to firm up. Slice off the top rind, then cut the cheese into 1/2-inch cubes.
  3. On a lightly floured surface, roll the puff pastry sheet just enough to smooth creases. Using a 2-inch round cutter, cut out circles. Gently press each circle into a cup of the prepared muffin tin.
  4. Place one brie cube into each pastry-lined cup. Top each with about 1/2 teaspoon of your chosen jam or topping.
  5. In a small bowl, whisk the egg with 1 teaspoon of water. Lightly brush the exposed edges of the pastry with the egg wash.
  6. Bake for 12-15 minutes, until the pastry is puffed and golden and the brie is melted and bubbly.
  7. Let cool in the pan for 2-3 minutes, then carefully transfer to a serving platter. Garnish as desired and serve warm.

Notes

For a quicker version using phyllo shells: Arrange 15 pre-baked shells on a baking sheet. Add a brie cube and topping to each. Bake at 350°F (175°C) for 6-8 minutes until melted. Assemble bites up to a day ahead, cover, and refrigerate; bake just before serving.
