  • 2 (5-ounce) cans solid white albacore tuna in water, drained well
  • 1 cup English cucumber, finely diced
  • 1 cup cherry or grape tomatoes, quartered
  • 1/2 cup red onion, finely diced
  • 1/3 cup Kalamata olives, pitted and sliced
  • 1/4 cup fresh parsley, finely chopped
  • 2 tablespoons capers, drained
  • 1/3 cup extra-virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste

Instructions

  1. Drain the tuna thoroughly and transfer to a large mixing bowl. Flake it with a fork.
  2. Add the diced cucumber, quartered tomatoes, diced red onion, sliced olives, chopped parsley, and capers to the bowl with the tuna.
  3. In a small bowl or jar, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, and dried oregano until emulsified. Season with salt and pepper.
  4. Pour the dressing over the tuna and vegetable mixture. Gently fold everything together until evenly coated.
  5. Taste and adjust seasoning with more salt, pepper, or lemon juice if desired. Let sit for 5-10 minutes before serving to allow flavors to meld.

Notes

For a creamier version, fold in 2-3 tablespoons of plain Greek yogurt. Ensure the tuna is well-drained to prevent a watery salad. The salad can be stored in an airtight container in the refrigerator for 3-4 days.
