Ingredients

Scale
  • 2 boneless, skinless chicken breasts (about 1 lb), thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon ground cumin
  • Salt and pepper to taste
  • 4 large whole wheat tortillas or flatbreads
  • 1 cup tzatziki sauce (store-bought or homemade)
  • 1 cucumber, thinly sliced
  • 1 cup cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • ½ cup crumbled feta cheese
  • ¼ cup kalamata olives, pitted and chopped
  • 2 cups fresh spinach or romaine lettuce

Instructions

  1. Prepare the chicken: Toss sliced chicken with olive oil, lemon juice, garlic, oregano, cumin, salt, and pepper. Let marinate 5 minutes while prepping vegetables.
  2. Cook the chicken: Heat a skillet over medium-high heat. Cook chicken for 3–4 minutes per side or until golden and cooked through. Rest 2 minutes, then slice into strips.
  3. Warm the wraps: Heat tortillas or flatbreads in a dry skillet or microwave for a few seconds until pliable.
  4. Assemble the wraps: Spread 2–3 tablespoons of tzatziki down the center of each wrap. Add spinach, chicken, cucumber, tomatoes, onion, feta, and olives.
  5. Roll and serve: Fold in the sides and roll tightly. Wrap in parchment or foil if needed for portability.

Notes

Use rotisserie chicken to save time. Swap in chickpeas or falafel for a vegetarian option. For meal prep, store components separately and assemble wraps as needed. Don’t overfill to keep wraps tidy and portable.
