Wake up to a breakfast that's already made with these creamy Maple Pecan Overnight Oats. This vegan, gluten-free recipe requires just 5 minutes of prep the night before for a satisfying, grab-and-go morning meal packed with cozy autumnal flavors.

Ingredients

Scale
  • 1/2 cup old-fashioned rolled oats
  • 1 tablespoon chia seeds
  • 2 tablespoons pure maple syrup
  • 3/4 cup milk of choice (almond, oat, etc.)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 2 tablespoons chopped pecans, for topping

Instructions

  1. Combine the oats, chia seeds, and salt in a jar or container with a lid.
  2. Add the milk, maple syrup, and vanilla extract.
  3. Stir everything together very well until fully combined.
  4. Seal the container and refrigerate for at least 4 hours or overnight.
  5. In the morning, stir the oats and add a splash of milk if too thick.
  6. Top with chopped pecans and serve.

Notes

For best results, use old-fashioned rolled oats rather than quick oats. Toast the pecans for enhanced flavor. Can be stored in the refrigerator for 4-5 days. Add toppings just before serving to maintain texture.
