These no-bake bars are a quick and joyful treat that turns an ordinary day into a tiny celebration. They combine the gooey texture of a s'more with the nostalgic crunch of colorful cereal for maximum fun with minimal effort.

Ingredients

  • 6 tablespoons unsalted butter
  • 1 (10 oz) bag regular marshmallows
  • 1 teaspoon pure vanilla extract
  • 1 pinch fine sea salt
  • 6 cups Lucky Charms cereal

Instructions

  1. Lightly grease an 8x8 or 9x9 inch baking dish. Lining it with parchment paper with overhang is recommended for easy removal.
  2. In a large pot, melt the butter over low heat. Add the marshmallows and stir constantly until completely melted and smooth, about 5-7 minutes.
  3. Remove the pot from heat. Immediately stir in the vanilla extract and pinch of salt.
  4. Quickly pour in the Lucky Charms cereal. Gently fold and stir until all cereal is evenly coated with the marshmallow mixture.
  5. Transfer the mixture to the prepared pan. Using parchment paper or greased hands, press the mixture firmly and evenly into the pan.
  6. Let the bars cool at room temperature for at least 1 hour to set completely before slicing into squares.

Notes

Use low heat to prevent the marshmallows from burning. Pressing firmly is key for bars that hold their shape. For a gluten-free version, use gluten-free crispy rice cereal and add 1/2 cup rainbow sprinkles.
