  • 1 ½ cups unsweetened almond milk
  • ½ cup fresh or frozen raspberries
  • ¼ cup chia seeds
  • 1-2 tablespoons pure maple syrup
  • 1 teaspoon pure vanilla extract
  • Tiny pinch of sea salt
  • For the Vanilla Bean Cream:
  • 1 cup plain Greek yogurt (full-fat or 2%)
  • 2-3 tablespoons honey or maple syrup
  • Seeds from ½ a vanilla bean pod (or 1 tsp vanilla bean paste)
  • Zest of ½ a lemon (optional)
  • For Assembly:
  • Fresh raspberries and blueberries
  • A handful of granola
  • A few mint leaves

Instructions

  1. Make the Raspberry Chia Pudding: In a blender, combine almond milk, raspberries, 1-2 tbsp maple syrup, vanilla, and salt. Blend until completely smooth.
  2. Pour the mixture into a bowl and whisk in the chia seeds. Let sit for 5 minutes, then whisk again to prevent clumps. Cover and refrigerate for at least 4 hours or overnight.
  3. Prepare the Vanilla Bean Cream: In a medium bowl, combine Greek yogurt, 2-3 tbsp honey, vanilla bean seeds (or paste), and lemon zest (if using). Whisk until smooth and creamy. Cover and refrigerate.
  4. Assemble the Parfaits: In clear serving glasses, start with a layer of the set chia pudding. Add a layer of vanilla cream. Repeat with another layer of each.
  5. Top with a final dollop of cream, fresh berries, a sprinkle of granola, and a mint leaf. Serve immediately.

Notes

For best texture, add the granola topping just before serving. The chia pudding and cream can be made up to 5 days ahead and stored separately. For a dairy-free version, use coconut yogurt and plant-based milk.
