This colorful and fun snack is the perfect St. Patrick's Day treat. A sweet and salty toffee coating is drizzled with green chocolate and rainbow sprinkles for a magical crunch. It's an easy, kid-friendly project that creates joyful kitchen memories.

  • 12 cups plain popped popcorn (about 1/2 cup unpopped kernels)
  • 1 cup (2 sticks) unsalted butter
  • 1 cup packed light brown sugar
  • 1/4 cup light corn syrup
  • 1/2 teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon baking soda
  • 1 cup green candy melts or white chocolate chips + green food coloring
  • 1/2 cup rainbow sprinkles (jimmies or nonpareils)
  • 1/2 cup Lucky Charms marshmallows (optional)

Instructions

  1. Prep the popcorn. Spread the plain popped popcorn on a large baking sheet lined with parchment paper. Remove any unpopped kernels. Scatter optional marshmallows over the top.
  2. Make the toffee coating. In a medium saucepan over medium heat, combine butter, brown sugar, corn syrup, and salt. Stir constantly until melted and boiling. Let boil without stirring for 4-5 minutes until slightly thickened.
  3. Finish the sauce. Remove saucepan from heat. Immediately stir in vanilla and baking soda. The mixture will foam and lighten in color.
  4. Coat the popcorn. Quickly pour the hot toffee sauce evenly over the prepared popcorn. Use two large spoons to gently toss and fold until all popcorn is well-coated.
  5. Add green magic. Drizzle the melted green candy melts or tinted white chocolate over the warm, coated popcorn. Immediately sprinkle the rainbow sprinkles over the top so they stick.
  6. Let set. Allow the popcorn to sit at room temperature for at least 1 hour, or until the coating is completely set and crisp.
  7. Break and serve. Once set, break the large cluster into bite-sized pieces. Serve in a big bowl for sharing.

Notes

Use plain popcorn, not pre-buttered. Do not stir the toffee sauce while it boils. Add sprinkles while the chocolate is still wet. Store in an airtight container at room temperature for up to 5 days.
