These Lemon Coconut Bliss Balls are no bake energy bites packed with healthy fats and fiber. They satisfy sweet cravings with natural ingredients and bright citrus flavor. Perfect for a quick snack or post workout treat.

Ingredients

  • 1 cup unsweetened shredded coconut, plus extra for rolling
  • 1 cup raw almonds or almond flour
  • 2 tablespoons coconut oil, melted
  • 3 tablespoons honey or maple syrup
  • Zest of 1 large lemon
  • 2 tablespoons fresh lemon juice
  • Pinch of sea salt

Instructions

  1. Pulse the raw almonds in a food processor until they form a coarse meal. If using almond flour, skip this step.
  2. In a mixing bowl, combine the shredded coconut, almond meal, lemon zest, and salt. Stir until evenly distributed.
  3. Add the melted coconut oil, honey or maple syrup, and fresh lemon juice. Stir until the mixture holds together when pressed. If too dry, add another teaspoon of lemon juice or water.
  4. Scoop about 1 tablespoon of mixture and roll into a smooth ball. Place on a parchment lined plate. Repeat with remaining mixture.
  5. Roll each ball in extra shredded coconut for a coating, if desired.
  6. Refrigerate for at least 30 minutes before serving to firm up.
  7. Store in an airtight container in the fridge for up to 2 weeks, or freeze for up to 3 months.

Notes

Do not skip the lemon zest; it provides the bright flavor. For a nut free version, substitute almonds with sunflower seeds or pumpkin seeds. For higher protein, add 2 tablespoons collagen peptides or vanilla protein powder, adjusting moisture if needed.
