This Lemon Blueberry White Chocolate Bark combines creamy white chocolate with bright lemon zest and juicy blueberries for a refreshing summer treat. Ready in under an hour with minimal effort, it makes a perfect dessert or homemade gift.

  • 20 ounces high-quality white chocolate chips or chopped white chocolate bars
  • 1 cup fresh blueberries, washed and patted completely dry
  • 1 tablespoon fresh lemon zest from about 2 medium lemons
  • 1 teaspoon lemon extract or 2 tablespoons fresh lemon juice
  • 1/4 cup dried blueberries for extra texture and sweetness
  • Flaky sea salt for finishing

Instructions

  1. Line a baking sheet with parchment paper or a silicone baking mat.
  2. Place white chocolate chips in a microwave-safe bowl. Heat in 30-second intervals at 50% power, stirring well after each interval, until mostly melted. Stir until smooth. Alternatively, use a double boiler.
  3. Stir in lemon zest and lemon extract or juice until fully incorporated.
  4. Pour melted white chocolate onto prepared baking sheet. Spread into an even rectangle about 1/4 inch thick.
  5. While chocolate is still wet, scatter fresh blueberries evenly across surface. Gently press them down so they sit partially embedded. Sprinkle dried blueberries over the top.
  6. Add remaining fresh lemon zest over the top for color. Finish with a light sprinkle of flaky sea salt.
  7. Place baking sheet in refrigerator for at least 30 minutes or until chocolate is completely firm.
  8. Once set, lift parchment paper and break bark into irregular pieces. Store in an airtight container in the refrigerator.

Notes

Ensure blueberries are completely dry to prevent chocolate from seizing. For dairy-free, use dairy-free white chocolate chips. For lower sugar, use sugar-free white chocolate chips. The bark can be stored in the refrigerator for up to 2 weeks or frozen for up to 3 months.
