Ingredients

  • 2 cups fresh corn kernels (or thawed frozen corn)
  • 1 cup sharp cheddar cheese, grated
  • 3 green onions, finely chopped
  • 1/2 red bell pepper, finely diced
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs, lightly beaten
  • 1/3 cup milk
  • Vegetable oil for frying

Instructions

  1. If using fresh corn, cut kernels off the cob. Thaw and pat dry if using frozen.
  2. In a large bowl, whisk together flour, baking powder, garlic powder, smoked paprika, salt, and pepper.
  3. In a separate bowl, beat eggs and milk together, then mix into the dry ingredients until just combined.
  4. Fold in corn, cheddar, green onions, and bell pepper. Batter should be thick and chunky.
  5. Heat 1/4 inch of oil in a skillet over medium heat (about 350°F).
  6. Drop heaping tablespoons of batter into hot oil, flattening slightly. Fry 2–3 minutes per side until golden.
  7. Drain fritters on a paper towel-lined plate. Serve hot and crispy!

Notes

For a healthier version, bake at 425°F for 10–12 minutes per side. Batter can be prepped in advance—just add baking powder right before cooking. Delicious served with avocado crema, sriracha mayo, or a simple salad.
