Ingredients
- 2 cups fresh corn kernels (or thawed frozen corn)
- 1 cup sharp cheddar cheese, grated
- 3 green onions, finely chopped
- 1/2 red bell pepper, finely diced
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs, lightly beaten
- 1/3 cup milk
- Vegetable oil for frying
Instructions
- If using fresh corn, cut kernels off the cob. Thaw and pat dry if using frozen.
- In a large bowl, whisk together flour, baking powder, garlic powder, smoked paprika, salt, and pepper.
- In a separate bowl, beat eggs and milk together, then mix into the dry ingredients until just combined.
- Fold in corn, cheddar, green onions, and bell pepper. Batter should be thick and chunky.
- Heat 1/4 inch of oil in a skillet over medium heat (about 350°F).
- Drop heaping tablespoons of batter into hot oil, flattening slightly. Fry 2–3 minutes per side until golden.
- Drain fritters on a paper towel-lined plate. Serve hot and crispy!
Notes
For a healthier version, bake at 425°F for 10–12 minutes per side. Batter can be prepped in advance—just add baking powder right before cooking. Delicious served with avocado crema, sriracha mayo, or a simple salad.
