  • 2 lbs bone-in, skin-on chicken thighs
  • 1/3 cup honey
  • 1/3 cup BBQ sauce
  • 4 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1 tbsp olive oil

Instructions

  1. Make the glaze by combining honey, BBQ sauce, garlic, soy sauce, vinegar, paprika, and pepper in a small saucepan. Warm over low heat for 2-3 minutes until smooth. Set aside half for serving.
  2. Pat chicken thighs dry with paper towels. Brush with oil and season both sides with salt.
  3. Preheat grill to medium-high heat (about 400°F).
  4. Place chicken skin-side down on grill. Grill for 6-8 minutes until seared and skin releases easily.
  5. Flip chicken and grill for another 5-7 minutes.
  6. Reduce grill heat to medium-low. Brush chicken with the glaze. Grill for 5-8 more minutes, flipping and basting every couple of minutes, until internal temperature reaches 175°F and glaze is sticky.
  7. Let chicken rest for 5 minutes before serving with reserved sauce.

Notes

Always pat chicken dry before grilling for the best sear. Do not add the sugary glaze too early or it will burn. Use an instant-read thermometer for perfect doneness. For a gluten-free version, use tamari and certified gluten-free BBQ sauce.
