A simple, elegant weeknight dinner featuring salmon fillets glazed in a sweet and tangy honey Dijon sauce, roasted alongside crisp snap peas. This one-pan meal comes together in under 30 minutes for a nourishing and satisfying dish that feels special with minimal effort.

  • 4 (6-ounce) salmon fillets, skin-on or skinless
  • 3 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 2 tablespoons olive oil, divided
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon smoked paprika
  • Salt and freshly ground black pepper
  • 8 ounces fresh snap peas, trimmed

Instructions

  1. Preheat oven to 400°F (200°C). Pat salmon fillets dry and place them on one side of a large, rimmed baking sheet.
  2. In a small bowl, whisk together Dijon mustard, honey, 1 tablespoon olive oil, minced garlic, lemon juice, smoked paprika, and a pinch of salt and pepper.
  3. Spoon or brush the honey Dijon glaze generously over the top and sides of each salmon fillet.
  4. On the empty side of the baking sheet, toss the snap peas with the remaining 1 tablespoon of olive oil and a pinch of salt. Spread them in a single layer.
  5. Bake for 12-15 minutes, or until the salmon flakes easily with a fork and the snap peas are bright green and tender-crisp.
  6. Serve immediately, spooning any pan juices over the salmon and peas.

Notes

For crispier snap peas, ensure they are in a single layer and not crowded. The salmon is done when it is just opaque and flakes gently. Taste the glaze before applying and adjust sweetness or tang to your preference. Leftovers are excellent flaked over a salad the next day.
