A comforting one-pan meal featuring tender sirloin cubes and crispy potatoes, all tossed in a rich, herby garlic butter sauce. It's a quick, satisfying dinner that brings everyone to the table.

  • 1.5 lbs sirloin steak, cut into 1-inch cubes
  • 1.5 lbs baby gold or Yukon gold potatoes, quartered
  • 2 tablespoons olive oil, divided
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 4 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
  • Optional: squeeze of fresh lemon juice

Instructions

  1. Pat steak cubes dry with paper towels. Toss with 1 tbsp olive oil, half the salt, pepper, and paprika. In a separate bowl, toss potatoes with remaining 1 tbsp oil and seasonings.
  2. Heat a large cast iron or heavy skillet over medium-high heat. Add potatoes in a single layer (cook in batches if needed). Cook 12-15 minutes, stirring occasionally, until golden and tender. Transfer to a plate.
  3. In the same hot pan, add steak bites in a single layer. Sear undisturbed for 2-3 minutes, then toss and cook another 2-3 minutes until browned to your liking. Remove to the plate with potatoes.
  4. Reduce heat to medium-low. Add butter to pan. Once melted, add minced garlic and cook for 60-90 seconds until fragrant, stirring constantly.
  5. Stir in fresh parsley and thyme. Return steak and potatoes to pan. Toss everything in the garlic butter sauce until coated and heated through. Serve immediately.

Notes

For best results, do not overcrowd the pan when cooking the potatoes or steak to ensure a good sear. Always pat steak dry before seasoning. Garlic burns easily, so keep heat low when cooking it in the butter.
