These High Protein Slow Cooker Garlic Butter Beef Bites are packed with flavor and nutrition. Juicy beef cubes slow-cooked in a savory garlic butter sauce make for the perfect easy comfort food dinner.

  • 2 pounds beef chuck roast, cut into 1-inch cubes
  • 6 tablespoons butter, divided
  • 8 garlic cloves, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 tablespoons low-sodium beef broth
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Season beef cubes with salt and pepper. Heat olive oil in a skillet and brown beef on all sides in batches. Transfer to slow cooker.
  2. In the same skillet, melt 4 tablespoons of butter. Add garlic and cook until fragrant, then stir in Worcestershire sauce, rosemary, thyme, and paprika. Pour over beef.
  3. Add diced onion and beef broth to the slow cooker. Stir gently to combine.
  4. Cover and cook on low for 6–8 hours or high for 3–4 hours until beef is fork-tender.
  5. 10 minutes before serving, stir in remaining 2 tablespoons of butter. Garnish with chopped parsley and serve hot.

Notes

Chuck roast is ideal, but stew meat or even brisket works well. For lower fat, use sirloin and reduce butter. Add mushrooms with onions for extra flavor and nutrition.
